This is the story about Allan leaving his life as an auditor to become a fulltime professional Baconista.
It is also a story about turning an idea into a dream – and then living out this dream.

Who hasn’t had that thought at some point in life?
Allan had it at a point in his life, where he had too much mass-produced bacon, that was either too salty, too smoky or too anonymous.
And guess what?
He did it better himself!
The story about Allan
Allan was born and raised in Denmark – The tiny country in northern Europe, that has more pigs than people. In Denmark, you must love bacon. It’s a part of our nationality. You won’t get deported if you don’t, but people will look at you, very suspiciously.
The Wanderlust
Allan was living a quiet life as an auditor in a global company. He was good at it. Very precise and determined and almost obsessive about the perfect result.
But something was smoldering in him. A quiet wish to do more, that grew into an urge to change his direction in life altogether.
It was wanderlust.
An urge to go out into the world and try his luck.
No more calculating other people’s values.
Allan wanted to add value.
First stop: India
In 2006 Allan quit his job, packed his suitcase, and went to India, to teach people to handle bookkeeping.
He jumped off the plane in India without any knowledge about the country, the people, the culture, or the business mindset.
This wasn’t just an exiting project – it turned out to become Allans self-taught Master’s Degree in cross-cultural understanding and entrepreneurship. And it was a success.
The job was done – but Allan’s wanderlust was still smoldering inside of him. What else could he do but wander, and his wandering took him to Boston to learn English, it took him around Asia and on to France where he snowboarded the mountains for quite a while before he took off to Spain to become a travel guide. But the smoldering was still inside of him.
His wandering didn’t fulfill his wanderlust. What was it that he wanted to do?
How could he add value?
Back at the desk
How can I add value to what I know? Allan asked himself. He knew that he was a hell of an auditor. Maybe that was it…?
How could he use that, to add value? How about solving financial crime? That would add value in so many ways. So now Allan became a forensic auditor in Copenhagen.
A thin red line of bacon
During his years of wandering, bacon was a part of his life.
His national heritage didn’t fade during his years out in the world.
But that smoldering… It was still there.
A little touch of discontent, that added an annoying flavor to his life – and one day, when he was eating bacon (again) the smoldering lit, and turned into a flame:

Bacon in a new perspective
He looked at his bacon with the eyes of an almost manic detail-oriented auditor, and he began to see the possibilities.
“If I can just put some love and time into the process…?” He thought. And so he did. With what he had in his kitchen, a Weber grill and patience, he made his first bacon.
It was by far the best bacon he had ever tasted.
That made him wonder: “If I can create this quality with little effort, imagine what I can do if I do my best?”
And this is where bacon changed his life!
The wanderlust inside of him turned out to be a bacon-wanderlust.
What he was trying to find on his journey around the world, was already inside of him. He just needed to recognize that he had to change his direction in life.
Allan now knew that he shouldn’t be doing numbers.
He should be doing bacon.

After some years, where his hunt for the perfect slice of bacon was a hobby, he got tired of bacon messing with his mind, when he was trying to focus on the numbers in his auditor job.
Allan was on his way home!
I want the world to know good bacon
This is what Allan answers when we ask him about the future.
And he is well on his way!
Since he became a fulltime Baconista, his bacon has become quite a brand.
The Danish Gastronomic Academy awarded Allan an honorary diploma for his “dedicated enthusiasm combined with an uncompromising attitude towards quality.” And his bacon has won three awards, including the 2016 food-category of the prestigious Danish cooking competition“Sol over Gudhjem.”
The ultimate book about bacon
